This month I’ve opted to try something different in the health tip section. So I hope you like this healthy desert I found (and of course adjusted to reduce calories).
Combine lemon juice, nutmeg and olive oil. Mix until even. Brush mixture over the pineapple slices.
Place pineapple slices on preheated grill over a high heat and grill for about 1 minute per side or until golden brown.
Remove from grill and immediately cut pineapple into bite size pieces, garnish with soy ice cream and fruit. Serve warm.
