Health Tip

This month I’ve opted to try something different in the health tip section. So I hope you like this healthy desert I found (and of course adjusted to reduce calories).

  • 1 pineapple, peeled, cored and cut into 1 inch thick slices
  • olive oil (Just enough to brush over pineapple slices)
  • 2 tablespoons of lemon juice
  • 1 teaspoon nutmeg
  • soy ice-cream
  • Mixed fruit or blueberries (op)
  • Combine lemon juice, nutmeg and olive oil. Mix until even. Brush mixture over the pineapple slices.
    Place pineapple slices on preheated grill over a high heat and grill for about 1 minute per side or until golden brown.
    Remove from grill and immediately cut pineapple into bite size pieces, garnish with soy ice cream and fruit. Serve warm.
